Sydneys beste Bäckerei auf Erfolgskurs











Am Samstag war die Eröffnungsfeier der nunmehr vierten Bourke Street Bakery, in Marrickville. Seit gut vier Jahren gibt es schon die Bourke Street Bakery in der Bourke Street in Surry Hills, dem hippen Stadtteil, in dem alles began. Schnell began sich rumzusprechen, dass es dort nicht nur unglaublich leckere Törtchen und knusprige Kopenagener und Croissants gibt, nein, es gibt sogar echtes Natursauerteigbrot! Bis vor kurzem noch eine echte Rarität in Sydney. Auch wenn das Brot nicht so schmeckt wie in Deutschland, und ja, ich vermisse ein richtig gutes deutsches Schwarzbrot, ist es doch von sehr guter Qualität. Die Besitzer und Bäcker, Paul und David, legen viel Wert auf Handarbeit und kaufen, wenn immer es geht, Biozutaten direkt von den Erzeugern ein (die Butter für die Croissant allerdings kommt aus Belgien). Das ist löblich, und ist mittlerweile in Sydney bei guten Restaurants und Bäckereien zum guten Ton geworden. Kein Wunder also, dass die Bourke Street Bakery zu einer Art Pilgerstätte der hippen Urbanier geworden ist, aber egal wie hip und trendy man auch sein mag, wer am Samstag nicht früh genau aus den Federn, der muss sich ganz weit hinten anstellen, um an seinen flat white mit rhubarb danish zu kommen.

Planet Cake book is out now




Finally 'my' first book is out now and can bee seen (and purchased) at bookstores across town. When I started at Murdoch Books I couldn't believe my luck when I got assigned to work on this project and to not only have the chance to learn a lot about the book making process but also to work together with such creative and driven people from Planet Cake.


Ich kann es kaum fassen, endlich ist 'mein' erstes Buch erschienen. Als ich vor gut einem Jahr bei Murdoch Books anfing, wartete bereits dieses coole Buchprojekt auf mich :-)
Unglaublich, wie lange es dauert und wie viele Stationen ein Buch durchläuft: vom ersten Entwurf, dem Manuscript bis hin zum Photoshoot, über die 1st pages zu den 1st proofs und irgendwann nach Hongkong um dann schließlich als richtiges Buch gedruckt werden. Gleichzeitig sehr spannend und ich habe viele schlaflose Nächte verbracht, dabei viel gelernt und sicher einige graue Haare bekommen.
Paris Cutler, die Autorin hat einen cakeshop für so genannte special occasion cakes der Planet Cake heisst und dort produzieren sie wahnsinnig tolle Torten und cupcakes für Hochzeiten, Geburtstage und Firmenevents. Planet Cake hat unter anderem auch die Hochzeitstorte für Nicole Kidman und ihren hubby Keith Urban gemacht!

Mein neuer Arbeitsplatz



Seit zwei Monaten arbeite ich bei Murdoch Books als Redakteurin. Endlich wieder Readaktionsluft schnuppern! Murdoch Books verlegt sehr gute Kochbücher, unter anderem auch die sehr erfolgreiche "Marie Claire" Reihe mit der Donna Hay so bekannt wurde. Der Verlag liegt wunderschön in Sydneys ältestem Stadtteil "the rocks", direkt am Wasser in einem ehemaligen Speicherhaus. Cate Blanchet wohnt dirket gegenüber und driregiert zur Zeit an der Bühne des Sydney Theater. Leider habe ich sie noch nicht gesehen, schade!

Und so sieht mein Arbeitsweg aus:






Neuerdings fahre ich regelmäßig mit dem Fahrrad zur Arbeit und wer Sydney kennt, weiß, dass das ziemlich anstrengend ist. Ähnlich wie in San Fran geht es hier nämlich ziemlich hügelig zu!

My first cookbook for Women's Weekly/ACP

I am very excited that my first cookbook I did for ACP/Women's Weekly got published recently.
Doing a cookbook is always hard work but also very rewarding and it was a great time and being able to work with such a great and dedicated team of photographer, home ecc and creative director! I love the layout! It's available at most newsagent or online.

My job for the "Marie Claire" 150th celebration issue

What a wonderful task and also very challenging. For the 150th Marie Claire celebration issue the editor wanted a true blue Australian retro look. I searched around a couple of days and was lucky. In one shop I even found bowls, cutlery and plates in bakelite. Mehr fifties geht nicht!

Daring bakers January challenge


The January challenge was a lemon merinque tarte and I was looking forward to this challenge as I am a big fan of lemon tarts. I am though not such a huge fan of merinque on top of the lemon filling but for a sweet tooth like me it went down well, nervertheless.

Daring bakers November challenge












Another challenge from the daring bakers: potato bread and some variations such as foccacia or rolls. Since it is summer and barbecue season in Sydney I couldn't resist in making foccacia as this goes so well with anything you put on the barbie. First of all, the dough had risen so high it was lifting up the tea towel I had placed on it. It was such a nice dough, I love yeast dough though this one was a bit hard to handle since it was very soft. But the result was such a bliss. I also made some muffin type rolls, I think they look really pretty.
The only thing, next time I will use kipfler potatoes, they will add more of the lovely potato flavour to the bread.

For my most recent shooting we changed the studio for a much better location: Bondi beach!
And it soon drew attention with the locals. One local stoped by and was looking for her camera.

I am a proud "daring baker"!



When I was browsing other blogs I stumbled upon one with a very interesting logo on it. I investigated further and found out that there is a club for people like me who just love baking and like to share the joy and sometimes the frustrations that comes along with it. The "daring baker" club has now more than 100 members worldwide and each month we get a different challenge to bake. The September challenge was sticky buns out of a yeast dough with cinnamon, walnut and a golden syrup and brown sugar glaze. The yeast came out so marvelously, it was a real beauty! I made 12 of them, but very soon there were only these two left. Lucky me, otherwise I couldn't have taken a picture of them. Needless to say that those two are already eaten by now! Thank you daring bakers for this truly marvelous recipe. I love it!

Kristin with Ed from Little Marionette





I managed to chat with Edward, owner of the small and cosy "Little Marionette" Café in Balmain over a Latte. We talked about why he opened this neat, tugged-away spot, what's popular with the guests and where he sees his own coffee roasting going. If this was a Melbourne laneway, we could rightly call the 15 square metres a "hole-in-the-wall". But the open view onto Gladstone park across the road and the warm and friendly atmosphere that Ed and his young (and hiply-dressed) crew create make "The Little Marionette" nothing like a coffee cave. Sarah Lorden's "Lifestyle" seemed to have agreed and made Ed their smiling cover star recently.
Thanks to Google, I was even able to find out that the mascot marionette on display in the cafe is a gift from Ed's mate and DJ/producer HookNSling. But since TLM plays rather mellow Soul, Reggae and the occasional Hip Hop we are not yet clued up to Hook's "monster electronic house tracks".

Fräulein Schlecker's"Stollen" at the market

I went to the Orange Grove Market in Lilyfied (more pictures on Flickr) where under the moniker of "Fräulein Schlecker" I shared a stand with Boris from Cologne who has been acquiring local fame with his tasty German sausages at his stall called "Hans Wurst". I sold Stollen which is a German Christmas speciality. When it is getting cold and wintery in good ol Europe, Germans like to stay at home and start baking for Advent and Christmas with candles lit. On the Advent weekends you gather family and friends and simply have a snuggly Sunday afternoon. Even though Stollen is a traditional Christmas treat it was very well received at the market. It is so yummy that you can basically enjoy it all year round ... especially at teatime. Additionally, I baked and decorated baby cupcakes in order to promote my customized wedding -, corporate cakes, cupcakes and figurines. I got a very good response and all baby cupcakes (especially the ones with pink hearts) sold quickly. Next time I will definitely make more of those!

Interview with PlanetCake owner Paris


I chatted with Paris last week about her craft and business (and sneakily my portfolio as well). Having gone from strength to strength in recent years, Paris and her customized cake business "Planet Cake" are now internationally renowned and an integral part of the Sydney food scene. See my snapshots here. Apart from producing great works of cake art for celebs and gourmets alike, working for media companies and teaching heaps of cake lovers through their much sought-after courses, they have recently revamped their website. It now features what proves to be a hit especially in the US: videos (newsletter subscription required) with insights into their work and techniques.

Aroma festival in The Rocks


Am Sonntag war in The Rocks, dem ältesten Stadtteil Sydneys das "Aroma Festival". Die Website des Festivals bietet leider (noch) keinen Foto-Rückblick, daher ein paar Schnappschüsse auf meinen Flickr Seiten. Bei ein wenig trübem Hanseaten-Wetter waren Anbieterstände für Kaffee, Tee, Gewürze und Schokolade aufgebaut und viele Sydneysider ließen es sich nicht nehmen dort ausreichend zu verkosten. Kaffee-Favorit war meiner Meinung nach "Inca Coffee", der wie alle anderen Röster für $1 den Becher ausschenkte. Neben den Ständen gab es auch Vorführungen wie die leckere "Chocolate Connoisseur Appreciation", wahrlich ein "guilty pleasure", das ich natürlich im Namen der Berichterstattung wahrnehmen musste!
Ebenfalls erwähnenswert war die "Sydney Latte Art Championship", die dieses Jahr Tristan Creswick für sich entschied. Wem das noch nichts sagt, dem sei gesagt, dass die Aussies den derzeitigen World Champion im kunstvollen Milchschaum stellen. Jack Hanna, der die Konkurrenz in Antwerpen düpierte, dokumentiert es hier auf Flickr.
Alles in allem ein prima Konzept, das auch viele Touristen genossen.
Sehr erholsam: wo immer es Proben gab, konnte man statt Ellbogen und Gemaule lange artige Schlangen sehen, da die Australier ebenso wie die Englänger ganz gesittete Ansteher sind. Mein wackeliges Video dazu hier bei YouTube.

Deutsches Bier findet immer Beachtung!


Es macht mich ein bischen traurig, dass die deutsche Küche im Ausland häufig schlecht abschneidet oder ganz ignoriert wird. Wenn es dagegen um Bier geht, ist Teutonia immmer noch der Standard. "Good Living", die Lifestyle Ausgabe des Sydney Morning Herald, empfiehlt in diesem Falle (nicht sehr originell) den bayerischen Biergarten am Viktualienmarkt. Hier in Australien gibt es zwar noch keine Biergartenkultur aber mittlerweile auch Boutique Brauereien, z.B. die "Little Creatures" aus Perth mit ihrer bizarren Pintzilla Werbung. Weißbier und Pilsener werden also auch Down Under erzeugt, aber diese Biere schmecken längst nicht so gut wie in Deutschland. Beerhunter Michael Jackson (nicht der mit dem Moonwalk) hat sich zur dürren australischen Bierlandschaft auch länger ausgelassen. Vielleicht muss man einfach auch auf Lederhosen stehen, um richtig guten Gerstensaft produzieren zu können!

Seit wann gibt es eigentlich...


Mousse au chocolat? "Mousse", das französische Wort für Schaum, war schon in den feinen französischen Küchen des 18. Jahrhundert sehr beliebt. Der französische Schriftsteller Menon beschreibt in seinem Buch "Suppers at Court" von 1755, dass Louis der XV. am liebsten heiße Schokolade trank. Damals war es eine Mischung aus geschmolzener Schokolade, heißem Wasser und zu Schaum geschlagenen Eiern. Auch der bekannte Maler des 19. Jahrhunderts Henri de Toulouse-Lautrec liebte neben dem Malen das Kochen. Es gibt sogar ein Kochbuch von ihm mit seinem Illustrationen aus der Belle Époque. Henri war nun ebenso Fan einer Mousse-ähnlichen Rezeptur, die er "Schokoladen Mayonnaise" nannte. Den finalen Schritt zu unserem geliebten Dessert machte schließlich Robert Carrier: er fügte noch etwas Sahne (wirklich nur ganz wenig ;-) ), Kaffee und Rum hinzu. Und das Rezept schmeckt uns bis heute!
